Once upon a time there was an eggplant on sale at King Soopers for 88 cents.
Usually when Jake goes out of town I make something easy and quick or get fast food but for some reason I felt compelled to make a nice dinner. So I decided last night to make eggplant parmesan and roasted asparagus!
And it was good.....

Okay not really......Lincoln ate some of it but Gillian, not so much. She puts on a good show for the camera though! She loves to perform! Unfortunately she isn't a good actress...ha ha...i just love her face when she is supposed to actually eat the food she professes to love...priceless.
